Prep time:5 minutes plus 2 hours in the fridge
For the chia pudding:
1 cup fresh raspberries
1 cup unsweetened almond or coconut milk
2 TB maple syrup or raw honey
1 tsp. lime juice
3 TB chia seeds
For topping:
1/2 banana, thinly sliced
1/4 cup fresh raspberries
1/4 cup fresh blueberries
Place the raspberries in a bowl and mash with a fork. Stir in the milk and sweetener of your choice, lime juice and chia seeds.
Set aside to soak in the fridge for 2 – 3 hours, until thick and jelly like
Divide the pudding between two jars or bowls and serve with bananas, raspberries, and blueberries.
