HarDarshan’s Mocha Java Mousse

1 1/2 cups raw cashews, soaked overnight
3 TB cacao powder
1/4 cup maple syrup
1 1/2 TB espresso or strong coffee
1/4 cup melted coconut oil
1/2 TB vanilla extract
Coco whip for garnish (available at Whole Foods in freezer section)
shaved chocolate, for garnish

Place all ingredients except coco whip and shaved chocolate into a high speed blender. Blend until smooth and creamy.
Place into individual small bowls and top with coco whip and shaved chocoate.
Refrigerate until ready to eat.
