You can find dried Wakame seaweed in the Asian section at Whole Foods. Seaweed is a great way to feed your thyroid gland!
This is a light yet creamy pine nut based chowder.
Ingredients:
1 oz. wakame seaweed
5 cups pure water
1 cup raw pine nuts
3 cloves garlic, peeled
1/4 cup fresh lemon juice
1/2 TB sea salt
Soak the seaweed in the water in a large bowl for 10 – 15 minutes. Using a strainer, strain the seaweed over another bowl. Measure 3 cups of seaweed water and discard or drink the rest. Set aside the seaweed for a garnish. In a blender, combine the 3 cups of seaweed water wtih the remaining ingredients and blend unti smooth. Pour into a serving bowl. Using a ladle, remove and discard any foam that rises to the top. Garnish with the seaweed.
