Ingredients:
1/2 cup raw almonds & 1/2 cup walnuts
1 & 1/3 cup pitted dates
1 tsp. vanilla extract & 1/8 tsp. sea salt
3 1/2 TB cacao powder
1 tsp. raw honey & 1 tsp. coconut oil
creamed coconut (available packaged at Whole Foods. Nut butter could also be used.)
1. Process the nuts in the food processor until they are crumbly.
2. Add dates and process until dates are chopped up well.
3. Add remaining ingredients and process until mixed well. The dough should be clumping together.
4. Remove from processor and form into a ball.
5. Using a cutting board and parchment paper, roll out the dough and use a small round cookie cutter to make individual cookies.
6. Put the cookies in the fridge or freezer for about 5 minutes to get them good and solid, then remove and put a dollop of coconut cream on one cookie, placing another on top. Press down a bit, and Voila!
7. Keep in fridge so coconut cream doesn’t melt
