3 medium cucumbers, made into noodles with a spiralizer or vegetable peeler

2 TB lime juice
1 TB toasted sesame oil
1 tsp. finely grated fresh ginger.
1 garlic clove finely grated.
1/4 tsp red pepper flakes, optional
