Ingredients:
1 cauliflower head, broken into florets.
1/4 cup olive oil
1 TB soy sauce
2 tsp. smoked paprika.
1 tsp. cumin
1/2 tsp. garlic salt
1/2 tsp. allspice
1/2 tsp. kosher salt
freshly ground black pepper
Cooked brown or white rice or quinoa, your favorite salsa verde, and
sliced avocado for serving
Preheat the oven to 400 degrees and line a large, rimmed baking sheet with parchment paper.
In a large bowl, whisk together the olive oil, soy sauce, spices, salt, and a few grinds of black pepper. Then add the cauliflower florets and toss until evenly coated.
Spread the cauliflower on the baking sheet and roast for 30 minutes or until tender and browned on the outside.
Serve the cauliflower over rice or quinoa with sliced avocado and salsa verde.
