(this quick, delicious and raw recipe comes from David Wolfe’s Naked Chocolate book. Thanks to Sat Inder Kaur for loaning it to me!)
Makes 10 gorgeous little bites
ground cinnamon
1 cup of pecans, not soaked
1 cup of pitted dates
Blend the pecans and dates together in a food processor to make a dough. Dust some cinnamon onto a clean work surface, and place the dough on it. Sprinkle some more cinnamon on top of the dough and flatten it out, adding more cinnamon if it gets sticky.
Make the edges nice and neat and then make the chocolate sauce:
4 heaping TB raw cacao powder
3 TB raw agave nectar
1/2 tsp. coconut oil
Mix all together to make a paste, and spread on top of the rolled out pecans and dates.
Pick up one side of the dough and start to roll to the other side, so you end up with a spiralled log. Cut into 10 rolls and serve. They won’t last long!
