“Namul” is a side dish in Korea.
Shiitake Mushrooms are a “medicinal mushroom” and are fairly easy to find – I found some at the Chapel Hill Farmer’s Market.
Here are some of the health benefits of shiitake:
*provides protein, fiber, B & C vitamins, calcium, potassium, & other minerals.
*Boosts heart health, lowers the risk of cancer, & promotes immune function
*fights viruses, bacteria, & fungus, decreases inflammation
*combats allergies, balances blood sugar levels, helps body detoxify
*Mushrooms are high in selenium, an anti-oxidant helpful in prostate health
*mushroom protein is easily digested
2 cups cleaned and thinly sliced shiitake mushrooms
2 tsp. toasted sesame oil
2 tsp. Nama Shoyu
1 clove pressed garlic
pinch of black pepper
Add all ingredients to a bowl and massage with your hands to mix well. Set aside at least 20 minutes to soften and marinate. Enjoy as a side dish, or add to salads, etc.
