(this is great with crackers and raw veggies & is quite popular with our teacher training group!)
16 oz. raw ground-sesame tahini
1 1/2 cups lemon juice
4 cloves garlic
1/4 cup de-stemmed cilantro
1/8 cup chopped green onions
1 tsp. Himalayan salt
1 TB nutritional yeast
Begin by placing lemon juice, garlic, cilantro, green onions, and salt in food processor, and process until lightly mixed. Pour in the tahini from the top of the processor while it’s still running, and keep it on briefly just until the mixture turns a shade of white and becomes thick. Over processing will cause the cheese to become green and bitter, so you may want to use the “pulse” feature to make sure that it’s well combined but doesn’t become a puree.
Makes 2 cups.
