Serves 2, ready in 20 minutes
Ingredients:
2 large romaine lettuce leaves
2 sheets dried Nori seaweed
1/3 cup sunflower greens or micro greens
1/4 avocado, sliced
1/4 cup diced tomato
1/4 cup raw corn kernels
1/4 orange bell pepper, sliced
1 clove minced garlic
a few slices of red onion
a few sprigs of cilantro
a few slices of pickled ginger
1 TB nama shoyu (unpasteurized soy sauce)
1 TB raw apple cider vinegar
1 tsp. finely minced jalapeno
toasted sesame oil
Directions:
Arrange romaine leaves on a flat surface and top each with a sheet of Nori. Divide filling ingredients in half and put into Nori sheets. Drizzle with sesame oil and roll up or serve open faced
