Corn Salad with Radishes, Lime, and Jalapeno


Makes 4 servings in under 5 minutes!

3 cups fresh corn kernels (about 3 large ears)
6 radishes, thinly sliced
1/2 jalapeno, seeded and finely chopped
3 Tablespoons fresh lime juice
2 Tablespoons coarsley chopped fresh cilantro leaves
1 1/2 Tablespoons olive oil

Combine all ingredients in a medium bowl and season with salt to taste.
