Creamy Mango Chia Seed Pudding

1 cup non-dairy milk
2 small or one large mango, chopped
1/2 cup coconut meat
1/3 cup chia seeds
2 TB lucuma powder
1/2 tsp. lime juice
1 TB coconut sugar
1/2 tsp. vanilla extract
1/4 tsp. celtic or pink Himalayan salt

In a blender, place the mango, coconut meat and milk and blend until smooth. Add the lucuma powder, coconut sugar, salt, lime juice, and vanilla and blent until well mixed. Add the chia seeds and blend on low until just incorporated. Pour into bowls and refrigerate for at least one hour. Yummy and refreshing!  Healthy, too! You can even eat it for breakfast!
