1 cup millet
1 1/4 cups almond milk
one 13.5 oz can of coconut milk
3 TB honey
3/4 tsp. vanilla extract
1 cup fresh or frozen mango pieces
1 TB freshly grated ginger root
1. Combine millet with almond milk, coconut milk, honey and vanilla in a medium pot.
2. Bring to a boil, then reduce heat to low and simmer until millet has absorbed most of the liquid, making sure to stir occasionally.
3. Add the mango and ginger
4. Cook on low heat for 3 – 4 minutes.
5. Remove from heat and enjoy!
